I was 17 when I had my first proper lobster roll. It was at a roadside diner in New England, dragged there by American friends who knew exactly what they were doing. If I close my eyes, I can picture being there and can taste every mouthful.
Since then, I’ve spent years going back to Connecticut and Maine, hunting down every version I can find with my great friends and guides, Jonathan and April, who are just as obsessed as I am. I’ve even made my own in Maine with lobster caught an hour before it hit the pan, which is hard to beat.

For me, it has to be native lobster.
UK lobster is sweeter, richer, more intense and genuinely a different animal to what you get further afield. When the main ingredient is this good, there’s no need to overcomplicate it.
A little bit of Maine
My first proper lobster roll was in New England, and I’ve been chasing that memory ever since.
Maine-style rolls tend to be cool, fresh and lightly dressed, keeping the lobster right at the centre of things.
A little bit of Connecticut
Connecticut-style rolls take things in a richer direction, with warm lobster and butter doing most of the talking.
We’ve borrowed the bits we love from both and made something that feels properly Sam’s.
And then there’s the dipping sauce
We use the lobster shells to make what we think is a rather magical dipping sauce, adding even more rich lobster flavour.
